2000 Caravina Cabernet 750

2000 Caravina Cabernet 750

TASTING NOTES

The 2000 Caravina is elegant and refined, leading with an exotic nose of luxardo cherry accompanied by sweet teriyaki, cooked fennel notes, dried fruit and tobacco leaves. The mid-palate and finish are impeccably smooth.

RATINGS

Robert Parker, The Wine Advocate (Aug. 2002) - 89 points
"The 2000 Caravina...has more sweetness and plump fruit than the 1999...[E]legant, refined, and delicious medium to full-bodied Cabernet..."

Stephen Tanzer, Vinous (June 2002) - 87-89 points
"Floral aromas of cassis, blueberry and blackberry, along with a tarry nuance. Juicy black fruit flavors given shape by sound acids. Not a dense wine but nicely focused and pliant. Finishes with ripe tannins and good length."

VINEYARD NOTES

Seavey's second estate-produced Caravina, the 2000, was made from Cabernet Sauvignon grapes that came from vines planted in several different locations of the south-facing hillside vineyard. Robert Parker described the 2000 vintage in Napa this way: "A challenging year, particularly for Cabernet Sauvignon producers, this vintage's cool growing season was complicated by unusual amounts of rain...Many rushed to harvest in order to save the grapes...the finest wines have come from those who waited...Some terrific wines can be found." At Seavey, we were among those who waited to pick until the grapes were completely mature. The harvest was long -- the first grapes were picked on September 14th and the last on October 27th.

PRODUCTION NOTES

Winemaking followed classic Bordeaux methods. Harvested at 23.5 degrees Brix, the juice remained in contact with the skins for an average of 14 days and, following malolactic fermentation, the wine was aged in French oak barrels (50% new oak) for 18 months before bottling on April 27, 2002.
